What is Bean Curd?

Bean curd, also known as tofu is made from curdling soy milk that is then pressed into blocks. The result varies in texture from a soft silky tofu, to a denser more textured block that can be chopped and pan crisped. Tofu is white and has a very bland flavor that makes it an excellent vehicle for any variety of flavors. It is commonly used in East Asian dishes, such as soups or stir fries, though has become popular across many cuisines as a vegan alternative to meat.
