What is Noodles?

Soba noodles are made from either buckwheat or wheat flour, or a combination of the two. They are thinner than udon and look like short and thin spaghetti strands with a greyish color. Buckwheat soba has a strong grain flavor and wheat soba has a milder grain taste. Boiled soba noodles are soft and easy to chew. They are used in Japanese cuisine.
