What is Masala Potatoes?

Masala potatoes are an Indian dish made of chopped and boiled potatoes sautéed with onions, green chilies, curry leaves and warming spices such as ginger, mustard and turmeric. The potatoes are softly textured with a warm yellow tone. The spices stand out prominently with saltiness and a hint of umami.
